Tagliatelle is a traditional egg pasta shape that, thought to have originated in Emilia-Romagna. Some say it was invented in the 15th century by Maestro Zafirano, a cook from Bentivoglio village. Legend has it that Maestro created a Tagliatelle shape when he first saw the long beautiful blonde hair of the bride-to-be of the Duke of Ferrara.
