Tartufissima Tagliatelle N.19 is hand-made egg pasta made by the original recipe of Giuseppe Montanaro, the founder of the company! First produced in 1990, the Tartufissima N.19 was awarded “Outstanding New Product” at the Fancy Food Summer Show of NYC.
Tagliatelle is a traditional egg pasta shape that, thought to have originated in Emilia-Romagna. Some say it was invented in the 15th century by Maestro Zafirano, a cook from Bentivoglio village. Legend has it that Maestro created a Tagliatelle shape when he first saw the long beautiful blonde hair of the bride-to-be of the Duke of Ferrara. However, one thing we know for sure is the measurements of perfect Tagliatelle. According to the Italian Academy of Cuisine, Tagliatelle has to be no more, no less than 7mm!
